Raisin Chicken and Rice 16 oz bag of rice 1 Tablespoon olive oil 1 lb. of boneless, skinless chicken breast cut in 3/4" pieces 1/2 tsp. garlic powder or 1 minced garlic clove 1/4 tsp. each salt and ground black pepper 1/2 cup chopped onion 2 cups thinly sliced fresh carrots 3/4 cup raisins 1/2 tsp. curry powder (optional) 1 can (14.5 oz) chicken broth Boil rice 8 minutes (Do step 2 & 3 while waiting) Heat olive oil in large skillet over medium high heat Add chicken and sprinkle with garlic, salt, and pepper. Cook 5 minutes or until browned. Push the mixture to the side, add and cook onion 2 minutes, stirring frequently Stir in rice, carrots, raisins, curry powder and broth, cover and simmer on medium heat about 8 minutes or until liquid is nearly absorbed and vegetables are tender. Stir and let stand uncovered for 2 minutes
