Christmas Morning Cinnamon Rolls--> Melanie Morrison Yield: 2 dozen small rolls 2 cans of Pillsbury crescent rolls - this fills one large pampered chef deep dish baker or one can of rolls per standard size round cake pan ½ stick of melted butter 1cup of sugar or more if you prefer 2 tablespoons of cinnamon or more if you prefer 1 to 2 cups of chopped pecans (optional) 1 to 2 cups of confectioner’s sugar for the frosting Water or milk Vanilla extract Preheat oven at 350. Lightly grease a round baking pan (I use a pampered chef deep dish baker) If you are using a round cake pan then you will need two pans. Mix the sugar and cinnamon together in a bowl and set aside. Open one can of the crescent rolls. Do not separate like you would to make rolls. Instead lay the entire piece of dough out on a cutting board. Pinch the perforated seams together making one large rectangular piece of dough. Brush melted butter over the entire piece of dough. Sprinkle the sugar and cinnamon mixture over the dough. If using pecan sprinkle pecans over the dough. Starting at one of the short sides of the rectangle begin to roll the dough making a large jelly roll. Slice the roll into slices about 1 inch wide. Place one of the end pieces in the center of your pan and then fill in around the center piece with the other slices. Let the rolls touch each other as you fill the pan. Repeat the process for the second can of rolls Once the pan is filled then bake according to the time directions on the crescent rolls. I bake them until lightly browned. When slightly cooled drizzle with the frosting. Frosting: Depending on the amount of frosting you want to put on your rolls mix 1 cup to 2 cups of confectioner’s sugar with water or milk. If using milk add a ½ teaspoon to a teaspoon of vanilla extract. I usually do not measure but I would say start with about 4 tablespoons of liquid and mix it into the sugar. If too thin add a little more sugar. If it is too thick add a little more liquid. When the frosting is the right consistency for you add in the vanilla.
